The key is: they don't.
Most guitarists just mute the 'non-strings' with their chording hand, or even go ahead and strike them open.
The more you play, the more accurate you'll become as well. You'll still hit the 'wrong' strings though.
The real key to any musicianship is being able to hit the wrong note, and make it sound right.
