Yeah tube heads definitely put out more wattage then rated for when dimed. Square waves at 240 watts are no good, thats one hell of a peak. One big side note you should consider here is in our isolation cabinet (as in any iso cab) the speaker has a sealed air chamber on BOTH sides of the speaker. This creates a lot more air resistance for the speaker to fight then in a normal cabinet, so overall wattage handling is a bit better. Same thing as how speakers handle power better in sealed enclosures over ported enclosures. Iso cabs handle power better then sealed enclosures x 2! =)
Basically I'm saying you don't need to worry about having twice the amount of power handling as your head is rated for. I've dimed a Peavey XXX through one of our cabs with the 80 watt speaker before and the XXX is rated at 120 watts. We did retube it with EL34's however.
I don't believe a 2x12 Iso cab is going to make anything more "pro". I spent a lot of time designing and planning, considering all the alternatives and options. Making a 2x12 iso cab as good as ours would be a monster. It's already bulky enough as it is a 1x12! You might have to hire some roadies for it!!
