Viewing the exact level of the signal - C4

I´m relatively new to cubase 4.
My singal chain is mic-->Apogee ensemble-->C4
What i need to know is: Where can i read exactly what´s happening to my signal? I can see when it´s clipping, and i see waveform, but i feel that that isn´t precise enough. I need to know:

1 How high are the signal peaks from the apogee preamps?
2 What (approximately) is my average level?

Can anyone help me out here?

Read a lot just now about how my recordings will probably sound better on lower levels, but i can´t seem to find any way to see my exact level. (because i´m new to cubase etc)

Very grateful for any answers that can help.
Also: how high would you keep the signal peaks when tracking 2 guitars 24/88.2 separately (Guitar 1 first; mono + guitar 2;mono)
