Medium attack, medium-fast release is a good starting point. If the attack is too fast, it might going to be a bit too grabby and sheer off the beginning of the syllable. Too slow on the release and the compressor will still be catching up from 5 words before. Gain reduction can be as deep as you need, it depends on the singer and the type of mic used (some mics sound more 'compressed' to my ears). These are just starting points though, there are no rules on this and whatever works for the song.
