but, I am only given a choice of 'version 5.0' (and below)
My question is if I 'Save copy as' & select 'version 5.0', will he still be able to open it up?

AFAIK, he should be able to open your session if he's on 5.3
When you do a "Save as" in versions 7 and up, the options are:
5.2-6.9
5.0
4.0
