Look into pressed hemp as your absorption material. It's chemically inert and fibers are not a health hazard like fiber glass and related products are.

I know several people who have developed sensitivites to traditional types of acoustic materials. I have seen hemp used effectively and its also mold resistant for high humidity areas. Europe uses a lot of hemp for insulation, etc and we will see this trend grow in North America.
