The bigger the hole the less rebound / resonance you're going to get. Placing it off to the side probably (guessing here but I am a drummer also) retains a bit more of the rebound since the blast of air would be more directed towards the center once you hit the beater. Having a hole bigger than about 6" or so is not much different (if any) than just having no resonant head at all.
It's much easier to mic a drum if you have cut the hole in the center.
