| Not so sure about 'them' but in my case it's mostly mono miced acoustics that are doubled/tripled/etc
What works great is doubling the basic chords with a capoed-up guitar or playing the same part again with a Nashville-tuned guitar. BTW, D'Addario sells a 'Nashville' string set, very convenient.
What I also do quite often is having one acoustic play the 2 + 4 of the snare and another one doing 'hi-hat' i.e 8th notes. This works great for certain tunes when panned hard L +R, basically the acoustic guitars become a harmonic extension of the drum kit.
